benefits:

However, first we need to understand why oyster mushrooms are great as foods. Oyster mushrooms are a nutritional powerhouse, offering a variety of health benefits. They are rich in essential vitamins, including Vitamin C and B-complex, which support immune function and energy production. Additionally, they provide a good source of protein, making them an excellent choice for plant-based diets. These mushrooms are also loaded with essential minerals like potassium, phosphorus, and iron, which are vital for maintaining healthy bodily functions. Beyond their nutritional content, oyster mushrooms are known for their antioxidant properties, which help protect the body against oxidative stress and inflammation. Incorporating oyster mushrooms into your diet can contribute to overall wellness, supporting both physical health and culinary enjoyment.

Now that we know why they’re important, let’s learn how they’re grown.

Cultivation:

Cultivating oyster mushrooms involves four key steps: preparing or procuring spawn, preparing the substrate, spawning the substrate, and managing the crop.

Spawn Preparation: Start with a pure culture of Pleurotus sp. on sterilized cereal grains. Jowar and bajra grains are preferable over wheat grains, with mycelial growth taking 10-15 days.

Substrate Preparation: Utilize agro-wastes like paddy straw, maize stalks, or industrial wastes such as paper mill sludge. Popular methods for preparing the substrate include steam pasteurization, hot water treatment, sterile technique, fermentation, and chemical
sterilization.

Spawning of Substrate: Use fresh grain spawn, ideally 20-30 days old. Conduct spawning in a pre-fumigated room to avoid contamination.

Crop Management:

  • Incubation: Arrange spawned bags in a dark room at 22-26°C for mycelium colonization.
  • Fruiting: Maintain high humidity (70-85%) and ensure proper ventilation to keep CO2 levels below 600 ppm. Harvest mushrooms before spore release by twisting them off the substrate.

Plant Protection: Protect crops from pests and diseases by using specific insecticides and fungicides, managing temperature and humidity, and applying chlorinated water and antibiotics.

Harvesting and Yield: Harvest before spore release for best quality. Expect over 500 kg of fresh mushrooms per ton of dry substrate in 45-60 days.
